Creamy & Tangy Gluten AND Dairy Free Pasta Salad!

Summer time… When the days get longer, drinks get colder, the sun gets hotter, and food gets better! 

When I think of the ideal Summer Backyard BBQ, I think about delicious meat on the grill, ice cold drinks, good company, AND pasta salad! There's just something special about a creamy & tangy pasta salad. However, we understand it can be difficult hosting when it involves dietary restrictions. That's why we came up with this delicious pasta salad recipe that is both gluten and dairy free. It is so fantastic that nobody will even know the difference!

This pasta salad is incredibly east to make, and you can customize the recipe based on your personal taste, or simply the ingredients you have on hand.

For gluten free noodles we chose to use GoGo Quinoa's Rice & Quinoa Fusilli. The trick is to make sure you do not overcook the noodles. You may even want to keep them slightly Al Dente so they perfectly hold their shape. We loved how these noodles turned out, they were the perfect texture, taste and size! For the most fresh & vibrant looking salad, we chose a variety of vegetables. Including bell peppers, red onion, celery, and herbs!

Ingredients

  • 1 box Gluten free pasta
  • 2 bell peppers (assorted colors)
  • 1 small red onion
  • 4 stalks of celery
  • 1 small bunch of parsley
  • 1/2 cup Dairy free mayo
  • 2 tbsp olive oil
  • 2 tbsp Light balsamic vinegar (we used a lemon garlic balsamic)
  • 1 tbsp sugar
  • 1 tbsp lime juice

 

Directions

  1. First, boil your pasta till slightly Al Dente. Drain and place in a large bowl in the fridge to cool off.
  1. Dice up all you veggies including the parsley, and set aside in a bowl.

  1. In a separate bowl, mix together mayo, olive oil, balsamic vinegar, sugar, and lime juice.

  1. Add your veggies into your bowl of pasta, along with the sauce. Mix well & add a good amount of salt & pepper to finish it off.
